As its name indicates (Amstel Dam means a city, Dam, on the Amstel river) Amsterdam is surrounded by canals. Being the largest city and Capital of the Netherlands, the best way to discover it is definitely by bike, visiting the Anne Frank House, going trough the Vondel Park or loosing yourself in the Red Light District.
